Celebration Cookies
Ingredients (makes 3-4 dozen medium size cookies):
1 cup softened butter
1 cup sugar
1 large egg
1 tsp vanilla
2 tsp baking powder
3 cups all-purpose flower
Preheat oven to 400.
In large bowl, cream butter & sugar together. Beat in egg and vanilla.Add baking powder and then flour, one cup at a time. Dough will be stiff. You do not need to chill. Roll out dough approximately 1/8” thick on to a floured surface. Cut with cutter dipped in flour. Bake on ungreased cookie sheet approx 6-7 minutes, or until just turning a light brown on edge. Cool 2 minutes on baking sheet.
Decorating glaze:
1 cup confectionary/powdered sugar
1/8 tsp salt
1/2 tsp vanilla extract OR I prefer 1/4 tsp vanilla & 1/4 tsp almond extract
1 1/2 TBSP cream or milk.
Blend ingredients in small bowl until smooth. Add more cream/milk if needed. Add food coloring if desired. Brush or spatula icing on to cookies. Let set.
